I use djembe every now and again for acoustic gigs. There's a bunch of sounds you can get from them. You can press on the head and do a pitch bend, or you could "mute" the head for a nice "pop" and you can also smack it and let it resonate. You could get yet another sound by cupping your hand and hitting dead center on the head. The result is a resonant thump with some bass in it. My approach is to find at least three good sounds that I like, then fit those three sounds into where kick bass, hihat, and snare sould normally fit into a pattern. But I don't always do it that way. Some songs sound way better with a minimalist approach, doing very little. Yet some others sound better with a "conga" like approach, playing something similar to what you'd hear on the congas.
